Stovetop, Knife
Step 1
Cut the chicken thighs into 2-inch pieces & place in a mixing bowl.
Step 2
Season the chicken with hot paprika, salt & pepper. Add a generous drizzle of olive oil & mix. Let the chicken marinate for 10-15 mins.
Step 3
Thread the chicken onto skewers, leaving a few inches on either end.
Step 4
Cut the pita into triangles & set aside.
Step 5
Heat a drizzle of oil in a grill pan on medium-high heat. If using an outdoor grill, preheat to medium-high. Add the skewers & cook for 6-8 mins on each side, or until the chicken is fully cooked (165ºF internal temp).
Step 6
Remove the skewers & set aside. Add the pita & grill for 1-2 mins on each side until warmed through.
Step 7
Plate the skewers with the pita & a handful of spring mix. Add a squeeze of lemon (optional) & dress the lettuce to your liking. Enjoy!
If you are using wooden skewers, soak them for 20-30 mins before grilling!
