Preheat the oven to 400°F. Peel & cut the carrots in half lengthwise. Then into slices.
Combine the honey & mustard in a small bowl.
Add minced or crushed garlic, salt, pepper & a drizzle of oil to the same bowl. Whisk to combine.
Grease an oven-proof baking dish. Then add the chicken.
Brush the chicken with half of the honey-mustard mixture.
Arrange the carrot slices around the chicken, drizzling them with oil. Sprinkle thyme over all.
Season with salt & pepper. Pour a bit of water into the perimeter of the dish. Cover & bake for 20 min at 400°F.
Remove the lid or foil. Baste the chicken with the remaining honey-mustard sauce. Continue cooking until the chicken is cooked through & the carrots are caramelized. Serve & enjoy!
