Spread cream cheese evenly over each slice of bread. Add the cheese & ham slices. Season with salt & pepper. Close the sandwiches.
Heat a pat of butter in a pan over medium heat. Brown the first side of each sandwich for 3 minutes. Flip & flatten with your spatula. Brown the other side for 2 minutes, again flattening with spatula.
Cover with a lid. Remove from heat. Let sit for 1 minute. Then, cut each sandwich into 3 sections. Turn them, so their open sides are facing up. Garnish with chopped chives or scallions (optional). Enjoy!
