A Mediterranean must-try, with juicy grilled chicken, yellow rice & creamy tzatziki!

Step 1
Wash the bell pepper & remove the seeds. Cut the pepper into 1-inch pieces. Add to a mixing bowl.
Step 2
Peel & cut the red onion into 1-inch pieces. Add to the peppers.
Step 3
Cut the chicken into 1-inch cubes. Add to the mixing bowl with the veggies. Drizzle everything with olive oil, then season with salt, pepper & oregano. Mix well.
Step 4
Thread the chicken & veggie pieces onto skewers, leaving a few inches on the bottom of each skewer.
Step 5
Heat a grill pan (or cast-iron skillet) over medium-high heat. Brush the grooves with oil. Grill the skewers for 10-12 min, turning occasionally as they cook, until the veggies are tender & the chicken is fully cooked (165°F internal temp). Remove from the heat.
Step 6
Heat the yellow rice according to package instructions.
Step 7
Serve the chicken & veggie skewers over the yellow rice. Finish with a dollop of tzatziki, a sprinkle of crumbled feta & a few cracks of pepper. Enjoy!
If you're using wooden skewers, soak them in water for at least 30 min before grilling (to prevent them from burning)!
