Ingredients

Stovetop, Pot (small), Electric hand mixer, Spatula, Knife

Chocolate bar (baking)

Step 1

Melt chocolate (about 2 oz per serving) in a heat safe bowl over a boiling pot of water, or in a microwave-safe bowl. Once smooth & well melted, remove from heat.

Step 2

Add a pinch of sea salt & gently mix. Set aside & cool.

Egg

Step 3

Separate egg whites from the yolks.

Step 4

Use an electric mixer to beat the egg whites until firm.

Step 5

Add the egg yolks to the melted chocolate. Mix well until smooth & homogeneous.

Step 6

Use a rubber spatula to gently fold the egg whites into the chocolate until combined.

Step 7

Pour the mixture into individual cups or small ramekins. Refrigerate for at least 1 hour before serving.

Step 8

Meanwhile, melt the rest of the chocolate (.5 oz per person) in a heat proof bowl over a boiling pot of water or in the microwave. Allow the chocolate to cool slightly. Open a zip-top freezer bag & pour in the melted chocolate. Twist the bag at the top, pushing all the chocolate towards one corner tip.

Biscuit cookie sandwich

Step 9

Make a tiny cut on the corner of the bag using scissors. Lightly press the bag to release the chocolate. Decorate the biscuit cookie "gravestones" with the melted chocolate, then set them aside.

Double Chocolate Chip Cookies

Step 10

Place the double chocolate cookies in a zip-top bag. Zip tight, then crush the cookies with a rolling pin or small pan.

Step 11

Take the chocolate mousse out of the fridge. Sprinkle crushed cookies on top. Add a decorated biscuit per cup. Serve & enjoy!
