The ultimate Christmas cookie! Do you prefer crunchy or chewy? This recipe is the perfect blend of both.

Step 1
Melt butter in the microwave or stovetop. Place the melted butter in a large mixing bowl. Add the brown sugar, molasses, cinnamon, ginger, allspice & a small pinch of salt.
Step 2
Let the mixture cool slightly, then whisk in the egg.
Step 3
In a separate bowl, whisk together the flour, baking powder & baking soda.
Step 4
Add the dry ingredients into the bowl with the wet. Use a spatula to combine. The mixture will look wet, but it will firm up! Wrap the dough in plastic wrap and refrigerate for 1 hour.
Step 5
Preheat the oven to 350°F. Remove dough from the refrigerator and flour a clean work surface. Place half of the dough onto the work surface and roll to 1/4 inch thick. If the dough sticks to the surface you can add more flour.
Step 6
Using a cookie cutter of your choice, cut dough into shapes and transfer them to a cookie sheet lined with parchment paper.
Step 7
Bake the cookies for 8 to 12 minutes until slightly browned around the edges. Let the cookies cool the cookie sheet for a few minutes, then transfer them to a wired rack to cool completely. Repeat these steps with the other half of the dough.
