Pot (small), Oven, Stovetop, Parchment paper, Sheet Tray, Knife
Step 1
Preheat the broiler. Peel, halve & thinly slice the onions.
Step 2
Melt a dab of butter in a pot over medium heat. Add the onions & season with salt & pepper. Stir & cook for 10-12 min until the onions begin to caramelize.
Step 3
Add the white wine & flour. Stir & cook for 3-4 min until wine reduces.
Step 4
Add the chicken stock & stir. Season the soup with salt & pepper (add your own seasonings like garlic powder, thyme & a bay leaf for additional flavor!) Bring the soup to a boil & lower to a simmer. Cook for 20-25 min or until the onions are very soft.
Step 5
Layer the bread slices on top of the pot of soup (alternatively, ladle the soup into bowls & add one slice of bread onto each bowl). Sprinkle the parmesan cheese onto the bread slices. Place the pot (or bowls) under the broiler for 2-3 min until the cheese is melty & the bread toasted.
Step 6
Serve the soup & season with black pepper. Enjoy!
