Olive oil (1/2 tbsp)

Step 1
Remove the husk of the corn. (If using frozen corn, thaw first!)

Step 2
Rinse & thinly slice green onions.

Step 3
Stand the corn vertically over a shallow bowl. Carefully cut off the kernels, allowing them to fall into the dish.






Step 4
Add in mayo, green onion, cumin, chili powder, salt, pepper & cotija cheese. Give it a stir & add a squeeze of lime. Mix it all together! Serve chilled with more lime if desired! Enjoy!
