Corn (canned)

Step 1

Drain the corn.

Flour (all-purpose)
Baking powder
Milk (whole)
Egg

Step 2

In a bowl, whisk together the flour, baking powder, milk & egg.

Parmesan (grated)
Corn (canned)

Step 3

Add the parmesan cheese & corn. Season with salt & pepper. Stir to combine.

Step 4

Heat a few drizzles of oil in a pan over medium heat.

Step 5

Add a ladleful of the corn batter. Flatten lightly with a spatula.

Step 6

Cook for 3 min on each side. Then set aside on paper towels to drain.

Step 7

Continue making fritters with the remaining batter.

Greek Yogurt (plain)
Chili powder

Step 8

In a small bowl, mix the Greek yogurt, salt, pepper, chili powder (optional) & a drizzle of olive oil.

Spring mix lettuce
Greek Yogurt (plain)

Step 9

Serve the fritters with the yogurt sauce for dipping. Add a side salad with your favorite dressing. Enjoy!
