Make sure you have...
Frying pan, Pot (small), Stovetop, Peeler, Colander, Knife
Step 1
Peel & dice the potatoes.
Step 2
Add the potatoes to a pot of water. Bring to a boil, salt the water & cook for 15-20 min, or until the potatoes are fork-tender.
Step 3
Bring a second pot of salted water to a boil. Wash & trim the green beans. Add them to the pot & cook for 3-5 min, until just tender. When cooked, drain the green beans & keep warm.
Step 4
Once the potatoes are cooked, drain them.
Step 5
Pour the potatoes into a bowl. Add the milk, butter, salt & pepper. Mash & continue stirring until you've achieved a creamy purée consistency. Set aside & keep warm.
Step 6
Pat the cod (thawed, if frozen) with a paper towel until bone-dry. Season on both sides with the old bay seasoning.
Step 7
Heat a pan over medium-high heat with a drizzle of oil. Once hot, add the cod & cook for 3-4 min per side, or until cooked through & easily flaked with a fork. Remove from the heat.
Step 8
Serve the cod over the potato purée & alongside the green beans. Drizzle the green beans with olive oil. Season everything to taste with salt & pepper. Enjoy!
