Step 1
Peel the orange, including the bitter white pith. Slice the orange into segments, removing any seeds. Rinse & drain the chickpeas.
Step 2
Add the arugula, chickpeas & oranges to a salad bowl. Top with the vinegar & a healthy drizzle of olive oil. Season with salt & pepper. Toss it all together. Garnish with fresh parsley (optional). Enjoy!
