Step 1
Melt the butter in the microwave or a small saucepan over medium heat.
Step 2
In a bowl, crush the cookies into crumbs by using the back of a glass or rolling pin.
Step 3
In a medium bowl, add the cookie crumbles, the rolled oats & melted butter. Mix well to combine.
Step 4
Zest the lemon.
Step 5
Slice & juice the lemon. In another bowl, combine the lemon juice & cream cheese. Add the sugar then mix well to combine.
Step 6
In a deep bowl, add cold heavy cream. Use an electric mixer to beat the cream for 3-5 min, until thick & fluffy.
Step 7
Add the cream cheese mixture into the whipped cream. Whisk with the electric mixer until well-combined & creamy.
Step 8
In ramekins or glasses, add a layer of the cookie/oat mixture. Top with the cream & lemon zest. Enjoy straight away or keep refrigerated for up to 2 days.
