Beer meets BBQ in every juicy bite!
Make sure you have...
Stovetop, Frying pan, Pot (small), Knife
Step 1
Cut the chicken into 1-inch cubes.
Step 2
Prepare the marinade. In a bowl, combine the beer, garlic (grated or minced) & lime juice. Season with salt, pepper & any additional seasonings you love (we recommend chili powder, onion powder & smoked paprika!). Stir to combine. Add the chicken & let it marinate in a cool place for at least 30 min.
Step 3
Preheat the oven to 400°F. Wash & cut the zucchini into half-moons.
Step 4
Wash & cut the potatoes in half or into quarters, depending on their size.
Step 5
Add the potatoes & zucchini to a sheet tray with a drizzle of olive oil. Season with salt, pepper & any of your favorite seasonings (garlic powder would be great here!). Toss to combine, then bake for 30-35 min at 400°F.
Step 6
Thread the chicken pieces onto the skewers.* *See our tip for this step.
Step 7
Heat a drizzle of olive oil in a frying pan over medium heat. Once hot, add the chicken skewers & cook for 4-5 min on each side, until cooked through (165°F internal temp) & golden brown.
Step 8
Once the veggies are cooked through & golden brown, remove the sheet tray from the oven.
Step 9
Plate the roasted veggies with the beer-marinated chicken skewers. Season to taste & enjoy!
If using wooden skewers, soak them in water for about 30 min before grilling (pan-frying or on the barbecue) to prevent them from burning.
