Ingredients

Yellow onion

Step 1

Peel & thinly slice the onion.

Olive oil
Bratwurst sausage (raw)

Step 2

Heat a drizzle of olive oil in a pan on medium heat. Add the bratwurst & brown for 3-4 min. Flip & brown on the second side for 2-3 min. Remove the bratwurst from the pan & set aside (the brats aren't fully cooked at this point!).

Step 3

Add the sliced onions to the pan. Season with salt & pepper. Add another drizzle of olive oil & stir. Cook for 12-15 min on medium heat until the onions are light brown & starting to caramelize.

Beer

Step 4

Add the beer & stir. Bring the beer to a boil, then nestle the bratwurst back in. Cover & cook for 12-15 min or until the bratwurst are fully cooked through.

Step 5

Remove the bratwurst & set aside. Continue to cook the onions & beer for another 3-5 min, or until the beer is more reduced.

Step 6

To serve, top the buns with the caramelized onions, bratwurst, sauerkraut & mustard (optional). Enjoy!
