Step 1
Cook the pasta according to the package instructions.
Step 2
Use a paring knife to scrape off the spikes on the asparagus stalks.
Step 3
Wash the asparagus & snap off the woody ends. Slice the asparagus on the diagonal.
Step 4
Grate the lemon zest into a bowl.
Step 5
Juice the lemon into a separate bowl.
Step 6
Just before the pasta is done cooking, add the asparagus to the pot. Cook together for 2-3 min.
Step 7
Drain the pasta & asparagus, reserving a bit of the cooking liquid.
Step 8
Melt the butter in a pan over medium heat. Add the lemon juice. Stir & let it simmer for 2 min.
Step 9
Add the pasta & asparagus to the pan.
Step 10
Add a bit of the pasta cooking liquid. Stir & simmer.
Step 11
Add most of the grated parmesan. Cook, stirring until it comes together into a cheesy lemon-butter sauce. Season with salt & pepper.
Step 12
Add half of the lemon zest to the pan & mix.
Step 13
Serve the pasta garnished with the rest of the lemon zest & parmesan. Spring has sprung!
