Step 1
Heat a drizzle of oil in a pot over medium heat. Add the minced garlic & ginger. Cook for 1 min.

Step 2
Add the vegetable broth & bring to a boil.


Step 3
Wash & cut the broccoli into small florets. Clean & slice the mushrooms.



Step 4
Once the stock is boiling, add the broccoli, mushrooms & coconut milk.
Step 5
Season with salt & pepper. Cover & cook for 8 min.

Step 6
Remove from heat. Add the soy sauce.

Step 7
Serve garnished with fresh cilantro leaves (optional). Enjoy!
