Step 1
Preheat the oven to 300°F. Spray a 9-inch cake pan with baking spray & set aside.
Step 2
Separate the egg whites from the yolks.
Step 3
In a mixing bowl, whisk the egg yolks with the sugar for about 2 min, until the mixture is thick & light yellow in color.
Step 4
To the bowl, add the milk, oil & vanilla extract. Whisk until smooth.
Step 5
Next, add the flour, baking powder & a pinch of salt. Mix with a spatula until the dry ingredients are just combined.
Step 6
In a separate bowl, beat the egg whites until stiff (you can do this by hand or with an electric hand-mixer). Then, gently fold them into the batter using a spatula.
Step 7
Pour the batter into the prepared cake pan. Bake for about 50 min at 300ºF. You can test that your cake is done by inserting a knife in the center. If it comes out clean, it's done!
Step 8
Remove from the oven & let cool for 10 min before turning the cake out onto a rack. Let the cake cool completely before decorating to your liking. Enjoy!
