Stovetop, Frying pan, Knife

Step 1
Wash & halve the pepper. Remove the seeds & slice lengthwise, into strips.

Step 2
Heat a drizzle of oil in a pan over medium heat. Add the peppers, stir & cook for 2-3 min, until slightly softened.


Step 3
Add in the green curry sauce & meatballs. Toss everything with the sauce & allow the mixture to simmer. Reduce the heat slightly & cover the pan. Cook for 15-20 min, stirring occasionally.


Step 4
Meanwhile, wash & thinly slice the Fresno chili pepper for some spice. Wash cilantro for garnish, if you wish!

Step 5
As the meatballs finish cooking, heat the rice according to package instructions.
Step 6
Serve the curry meatballs & peppers over a fluffy bed of rice. Garnish with sliced chili pepper & cilantro (optional). Serve & enjoy!
