Juicy meatballs with a gingery kick, served over a bed of fluffy rice!
Make sure you have...
Stovetop, Frying pan, Pot (small), Knife
Step 1
Cook the rice according to package directions.
Step 2
Meanwhile, prepare the meatballs. In a bowl, add the ground beef. Grate in half of the garlic & ginger. Season with salt & pepper, then mix by hand.
Step 3
Oil your hands to prevent sticking, then form the meatballs.
Step 4
In another bowl, add the soy sauce & honey. Grate in the rest of the garlic & ginger. Squeeze in a little lime juice & mix well.
Step 5
Heat a drizzle of olive oil in a frying pan over medium-high heat. Add the meatballs & cook for 7-8 min, flipping halfway through.
Step 6
When the meatballs are nicely browned, pour in the honey-soy sauce mixture. Continue cooking for 3-4 min over medium heat, spooning the sauce over the meatballs & stirring often. Remove from the heat when the meatballs are fully cooked & the sauce has thickened into a sticky glaze.
Step 7
Serve the meatballs on a bed of rice, drizzled with extra sauce. Garnish with a sprig of cilantro & a lime wedge. Enjoy!
To brighten up your plate, serve with a green veggie like steamed broccoli or baby bok choy!
