Step 1
Preheat the oven to 450°F. In a heat-safe bowl, melt the butter in the microwave. Set aside.
Step 2
In a large bowl, add eggs, milk & a pinch of salt. Mix well with an immersion blender or hand mixer. Whisk in the flour in two batches until fully combined. (You can continue with the immersion blender, but flour might get a bit messy!) Finally add the melted butter & blend it well. The consistency should be airy & frothy. Set aside for 10 min.
Step 3
Heat a muffin tin or popover tin in the oven for 10 min as the batter rests. Carefully remove it from the oven & spritz each cup with cooking spray.
Step 4
Working quickly, fill each cup 3/4 of the way with batter (a measuring cup works great here). Sprinkle cheddar cheese over top then bake in the oven for for 20 min at 450°F. After 20 min, reduce the heat to 350°F & bake 10 more min.
Step 5
Rinse & thinly slice some chives.
Step 6
Remove the popovers from the oven & immediately invert them onto a cooling rack to stop the cooking. Slice a popover in half & savor the delicious steam ; ) Top with a bit of salted butter & chives. Enjoy!
