Make sure you have...
Knife, Stovetop, Oven, Frying pan
Step 1
Preheat the oven to 400°F. Drain & cut the artichokes into halves or quarters, depending on the size.
Step 2
Grate or mince the garlic.
Step 3
Heat a drizzle of oil in an oven-safe frying pan over medium heat.
Step 4
Add the garlic & cook for about 30 sec, until fragrant. Stir in the spinach & cook until wilted, stirring often, about 3-4 min.
Step 5
When the spinach is wilted, stir in the artichokes until warmed through, 1-2 min. Season everything with salt, pepper & any additional seasonings you love (we recommend oregano, onion powder & crushed red pepper flakes!). Remove from the heat.
Step 6
Place the cod fillets over the veggies. Pour the cream over the cod & veggies. Season the cod fillets with salt & pepper.
Step 7
Transfer the frying pan to the oven & cook for 15-20 min, until the cod is fully cooked & flakes easily with a fork.
Step 8
If you'd like, finish the dish with extra pepper, a squeeze of lemon & a sprinkle of parmesan (optional). Serve & enjoy!
