Stovetop, Frying pan, Knife
Step 1
Heat a drizzle of olive oil in a skillet over medium-high heat. Add the gnocchi & cook for 2-3 min, stirring occasionally. Cover, turn heat to low & continue cooking for 2-3 more min.
Step 2
Meanwhile, drain & slice the sun-dried tomatoes into thin strips.
Step 3
Check the gnocchi for doneness. Once golden brown & tender, set them aside.
Step 4
In the same pan, heat a drizzle of olive oil over medium heat. Grate in the garlic & sauté for 30 sec, stirring.
Step 5
Add the sun-dried tomatoes, heavy cream & grated parmesan. Season with pepper & cook for 2-3 min, stirring occasionally.
Step 6
Add the Italian seasoning & spinach. Mix well & continue cooking until the spinach has wilted, 1-2 more min.
Step 7
Add the gnocchi to the pan & cook for 1-2 min, stirring often to combine everything well. Remove from heat.
Step 8
Serve the Tuscan gnocchi on a plate. Sprinkle with grated parmesan (if you have any leftover) & season to taste. Enjoy!
