Stovetop, Frying pan
Step 1
Peel & thinly slice the onions.
Step 2
Heat a drizzle of olive oil in a skillet over medium heat. Add the onions & pancetta. Cook for 5-6 min, stirring occasionally. Once golden brown, set aside.
Step 3
In the same pan, add another drizzle of olive oil over high heat. Add the gnocchi & brown for 2-3 min, stirring occasionally. Cover & continue cooking for 3-4 min over low heat, until golden brown.
Step 4
Uncover & add the bacon mixture, cream & Parmesan cheese to the pan. Season with salt & pepper. Stir & cook on low heat for 3-4 min until the sauce incorporates. If the sauce looks too thick, add a splash of water & stir.
Step 5
Serve the gnocchi in a shallow bowl. Garnish with additional Parmesan cheese if desired. Enjoy!
