Soy-Glazed Salmon with Sweet Potato Mash

Stovetop, Pot (small) and Frying pan.
Recipe



Step 1
Prepare the marinade. In a large bowl, combine: the soy sauce, honey, grated garlic & half a teaspoon of olive oil per serving.
Step 2
Pat the salmon fillet dry & coat it in the marinade. Set aside in the fridge for 10 mins.

Step 3
Meanwhile, peel & cube the sweet potatoes.
Step 4
In a pot of boiling salted water, cook the sweet potatoes for 10 to 15 mins, until fork-tender. Once cooked through, drain them.

Step 5
In the meantime, heat a drizzle of olive oil in a pan, over medium heat. Add the salmon skin-side down & sear for 3-4 min. Add the remaining marinade, flip the salmon & continue cooking for another 2-3 min, until cooked through. Set aside & keep warm.
Step 6
Season the sweet potatoes with salt & pepper. Add a knob of butter & mash until smooth & creamy.

Step 7
Serve the sweet potato mash on a plate with the soy-glazed salmon & arugula dressed to your linking. Enjoy!
