Slow cooker, Knife
Pat the pork down with a paper towel. Cut into 2 inch cubes if necessary. In the base of a slow cooker, add cubed pork, cumin, chili powder, apple cider vinegar, salt, pepper & 2 cups of water. Mix it all together, cover & cook on HIGH for 4 hr, or LOW for 8 hr.
In a bowl, combine coleslaw mix & coleslaw dressing. Store in the fridge until serving.
Uncover the slow cooker & transfer the meat to a bowl. Use two forks to shred the pork. Mix in bbq sauce until evenly coated.
Build the sandwich! On the bottom half of a toasted bun (optional), add pulled pork & another spoonful of bbq sauce. Add a scoop of coleslaw & close the sandwich. Serve & enjoy!
