Stovetop, Pot (small), Frying pan, Knife
Step 1
Peel & cube the potatoes.
Step 2
Add the potatoes to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender.
Step 3
Peel & mince the shallot. Heat a drizzle of oil in a pan over medium heat. Add the shallots. Cook, stirring for 1-2 min.
Step 4
Add the red wine vinegar. Let it slowly evaporate.
Step 5
Reduce the heat to low. Add most of the butter, reserving the rest for the potatoes. Season with salt & pepper. Whisk continuously as the sauce comes together. Then turn off the heat. Cover to keep warm.
Step 6
Add the drained potatoes to a bowl with the milk & the rest of the butter. Season with salt & pepper. Mash it all together with a potato masher or fork until smooth & creamy.
Step 7
Heat a drizzle of oil in a pan over medium-high heat. Add the salmon. Cook for 3-5 min on each side, or until cooked through.
Step 8
Serve the salmon over top the mashed potatoes. Drizzle the sauce over all. Season with salt & pepper. Garnish with chopped chives (optional). Enjoy!
