Roasted Cauliflower with Green Beans

Step 1

Preheat the oven to 400°F. Cut the cauliflower in half. Remove the tough stem.

Cut off a 1-inch thick slab of cauliflower (per serving). Cut or break the rest of the cauliflower into florets.

In a large pot of salted boiling water, add the cauliflower steaks & florets. Cook over medium heat for 8 minutes.

Maple syrup

Step 4

Meanwhile, make the cauliflower steak marinade. Add the paprika, maple syrup, lemon juice & garlic (grated, minced, or crushed) to a small bowl.

Step 5

Add 1 tablespoon of olive oil. Season with salt & pepper. Whisk to combine.

After 8 minutes, remove the cauliflower steaks from the water. Leave the florets to cook for another 7 minutes.

Step 7

Place the cauliflower steaks on a baking sheet, cover with the marinade & a drizzle of oil. Bake for 15 minutes.

Green beans (fresh)

Step 8

While the steaks cook, bring a pot of salted water to a boil. Add the green beans & cook for 3-5 minutes, or until crisp-tender.

Drain the cauliflower florets & mash with a fork or puree with immersion blender. Add oil, salt & pepper to taste.

Add some lemon zest to the puree.

Drain the green beans.

Step 12

Remove the steaks from the oven. Serve over the cauliflower puree & alongside the green beans. Season with salt & pepper. Enjoy!
