Ingredients

Stovetop, Pot (small), Frying pan

Soy sauce
Honey
Garlic

Step 1

Prepare the marinade. In a large bowl, combine: the soy sauce, honey, grated garlic & a teaspoon of olive oil per serving.

Step 2

Pat the chicken dry & coat it in the marinade. Set aside in the fridge for 10 mins.

Sweet potato

Step 3

Meanwhile, peel & cube the sweet potatoes.

Step 4

In a pot of boiling salted water, cook the sweet potatoes for 10 to 15 mins, until fork-tender. Once cooked through, drain them.

Chicken breast

Step 5

In the meantime, heat a drizzle of olive oil in a pan, over medium heat. Add the chicken. Season with pepper & sear for 4 to 5 minutes on each side, until cooked through & golden brow. Add the remaining marinade & continue cooking for another minute. Set aside & keep warm.

Step 6

Season the sweet potatoes with salt & pepper. Add a knob of butter & mash until smooth & creamy.

Arugula

Step 7

Serve the sweet potato mash on a plate with the soy-glazed chicken & arugula seasoned to taste. Enjoy!
