Step 1

Clean & finely chop dill.

Egg
Vegetable oil

In a large bowl, beat the eggs & oil. (Rendered chicken fat or coconut oil works great too!)

Club Soda (seltzer)
Dill (fresh)

Step 3

Add the club soda, 1 tbsp of hot water (per serving), salt, pepper & chopped dill. Mix it all together.

Matzo ball mix (matzo meal)

Step 4

Mix in the matzo meal until well-combined. Cover the bowl with plastic wrap & refrigerate for 1 hr.

Chicken noodle soup

Step 5

Once the mix has chilled, boil a large pot of water. With wet hands, scoop about 1.5 tbsp of the mix & roll into a ball. Drop each ball into the boiling water. Lower heat to a simmer & cook covered for 25-30 min. Meanwhile, heat your favorite chicken soup.

Step 6

Remove the cooked matzo balls with a slotted spoon & add them to the soup. Serve hot & enjoy! Pro storage tip: Add the matzo balls to a lidded container with a few tablespoons of veggie stock & store in the fridge.
