Latkes with Smoked Salmon

Perfectly crispy potato pancakes. Sprinkle with chives, dip into sour cream & enjoy!

Stove top, Kitchen Towel, Pot (small), Peeler, Grater, Frying pan

Step 1

Wash & peel the potatoes. Peel the onion.

Grate potatoes & 1/2 an onion (or whole small onion) with a cheese grater.

Step 3

Remove excess water by wrapping the grated potato & onion mixture in a clean dishcloth & squeezing firmly.

Flour (all-purpose)

Step 4

In a medium bowl, combine the potato & onion mixture with the flour & eggs. Season with salt & pepper to taste. Mix thoroughly.

Step 5

Heat 1 tablespoon of oil in a frying pan over medium-high heat. Add 2-3 tablespoons of the potato mixture. (You can cook more than one potato pancake at a time in a larger frying pan.)

Step 6

Flatten the mixture by pressing down with the back of a spatula. Cook for 5 minutes or until bottom side is golden brown.

Step 7

Flip the latke over & cook for 3 minutes or until done to your liking. It should be golden brown on both sides. Continue until all the mixture is cooked into crispy pancakes.

Step 8

Remove from heat. Serve with slices of smoked salmon, dollop of sour cream & a sprinkle of fresh chives or scallions (optional). Enjoy!
