Make sure you have...
Microwave, Frying pan, Knife
Step 1
Line a microwave-safe plate with a paper towel, add the bacon slices & cover with another paper towel. Microwave for 3-4 min, or until cooked to your liking.
Step 2
Wash & thinly slice the tomato.
Step 3
Heat a drizzle of oil in a grill pan over medium-high heat. Pat dry the chicken with a paper towel & butterfly or halve the chicken breast lengthwise. Season with salt & pepper on one side.
Step 4
Arrange the chicken breast on the grill pan. Cook for 3-4 min, then flip. Season the next side with salt & pepper. Grill until the chicken is fully cooked, 3-4 min.
Step 5
Remove the chicken from the grill & set aside. Layer a slice of pepper jack cheese on top of the hot chicken to melt.
Step 6
On a warm or toasted bun, spread Thousand Island dressing. Layer on the lettuce, tomato, bacon & grilled chicken. Close the sandwich, serve & enjoy! Pro tip: no sandwich is complete with out chips & a pickle ; - )
