Oven, Sheet Tray, Knife
Preheat the oven to 400°F. Peel & slice the red onion into wedges.
Clean & halve or quarter the mushrooms, depending on their sizes.
If desired, peel the butternut squash. Halve the squash & remove the seeds. Cut it into small cubes.
Slice the sausage into bite-sized pieces.
On a baking sheet, add the gnocchi, squash, mushrooms & onions. Add a drizzle of olive oil. Season with Italian seasoning, salt & pepper. Mix it together.
Add the sausage slices on top of the vegetables & roast for 25-30 min at 400°F.
Remove the tray from the oven & top with a few shavings of parmesan on top. Serve & enjoy!
