Gluten-Free Sausage & Peppers Pasta

Ingredients

Step 1
Rinse the bell pepper & remove the seeds. Thinly slice.

Step 2
Peel & thinly slice the onion.

Step 3
Peel & grate or mince the garlic.

Step 4
In a pot of salted boiling water, cook the pasta according to the package instructions.


Step 5
Heat a drizzle of oil in a pan over medium-high heat. Add the sausage & brown on each side for about 5-6 mins. Transfer to a plate.



Step 6
In the same pan, add garlic, onions & bell peppers. Sauté for 5-6 mins, or until everything is nicely caramelized.

Step 7
Drain the pasta in a colander & set aside.

Step 8
Season the veggies with salt & pepper. Stir in tomato paste & mix it all together.


Step 9
Slice the sausage & add it back to the pan. Add the pasta & mix it all together.


Step 10
Garnish with parmesan cheese & freshly torn basil (optional). Serve & enjoy!
