Olive oil
Spinach (fresh)

Step 1

Preheat the oven to 400°F. Heat a drizzle of oil in an oven-safe frying pan (cast iron works well!) over medium heat. Once hot, add the spinach & a pinch of salt. Cook until wilted, 1-2 min.

Marinara sauce

Step 2

Add the marinara sauce & bring to a gentle simmer.

Heavy cream

Step 3

Pour in the cream & stir to combine.

Cod (fresh)

Step 4

Turn off the heat & nestle the cod fillets into the sauce. Season the cod with salt & spoon some sauce on top of each fillet.

Step 5

Cover the frying pan with foil & transfer to the oven. Bake until the fish is cooked through & flakes easily with a fork, about 15-17 min.

Mixed grain blend (cooked)

Step 6

Heat the mixed grains according to package instructions.

Basil (fresh)

Step 7

Remove the cod from the oven & uncover the foil. Serve with extra sauce spooned on top & mixed grains on the side. Drizzle with olive oil, then season to taste with salt & pepper. Garnish with fresh basil (optional). Enjoy!
