Chicken Skewers with Zucchini & Rice

Ingredients

Stovetop, Frying pan and Pot (small).
Recipe

Step 1
In a pot of boiling salted water, cook the rice according to the package instructions. Drain when cooked.

Step 2
Meanwhile, wash & slice the courgettes into half-moons.

Step 3
Peel & finely mince the onions.

Step 4
Pat the chicken dry & cut it into 1-inch cubes.

Step 5
Prepare the marinade. In a bowl, add: half of the Italian seasoning & a drizzle of olive oil. Season with salt & pepper. Stir to combine. Add the chicken & stir to evenly coat.

Step 6
Thread the chicken pieces onto the skewers*. Repeat for the amount of skewers needed. * Check out our tips for this step
Step 7
In a hot pan or on the grill, add the chicken skewers. Cook for 4-5 min on each side, until cooked through (165°F internal temp) & golden brown.
Step 8
In the meantime, heat a drizzle of olive oil in a second pan, over medium heat. Add the onions, zucchini & remaining Italian seasoning. Season with salt & pepper. Cover & leave to cook for 7-8 min, stirring from time to time.

Step 9
Serve the fluffed rice with the grilled zucchini, chicken skewers & tzatziki. Re-season to taste & enjoy!

If using wooden skewers, soak them in water for about 30 min before grilling (pan-frying or on the barbecue) to prevent them from burning.
