Chicken Skewers with Roasted Tomatoes & Rice

Stovetop, Frying pan and Pot (small).
Recipe

Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, fluff the rice & keep warm.

Step 2
Meanwhile, cut the chicken into bite-sized pieces.

Step 3
In a bowl, add: the chicken, half of the Italian seasoning & a drizzle of olive oil. Season with salt & pepper. Mix.

Step 4
Thread the chicken pieces onto the skewers.* Repeat for the remaining skewers. *Check out our tips for this step
Step 5
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken skewers & cook for 4-5 min on each side, until cooked through (165°F internal temp) & golden brown.

Step 6
Meanwhile, in a second pan, heat a drizzle of olive oil over high heat & add the cherry tomatoes. Season with the remaining Italian seasoning, salt & pepper. Cook for 3 min over high heat. Cover the pan, lower the heat & simmer for 5 min.

Step 7
Serve the fluffy rice with the roasted tomatoes & chicken skewers. Top with chopped parsley, if you have any. Re-season to taste & enjoy!

If using wooden skewers, soak them in water for about 30 min before grilling (pan-frying or on the barbecue) to prevent them from burning.
