A cacio e pepe so good you won't realize there isn't any pasta! :-)
Make sure you have...
Stovetop, Pot (large), Frying pan, Knife
Step 1
Soak & cook the gigante beans according to package directions. Reserve 1/4 cup of the cooking water (per serving). Drain the beans & set aside.
Step 2
In a food processor, grind the black peppercorns. Alternatively, use a pepper mill to grind the black peppercorns.
Step 3
Add the broccolini to a pan of boiling water & cook for 4-5 min or until it's bright green & tender. Remove the broccolini, pour out the excess water & wipe out the pan.
Step 4
In the same pan, heat a drizzle of oil on medium-high heat. Add the broccolini, season with salt & pepper. Cook for 2-3 min on each side. Remove from the heat & set aside.
Step 5
Melt a dab of butter in the pan on medium heat. Add the ground black pepper & the reserved bean water. Simmer for 1-2 min.
Step 6
Add the cooked beans & parmesan cheese to the pan. Stir & cook for 2-3 min or until the sauce thickens.
Step 7
Serve the saucy beans with the broccolini. Top with more grated cheese & a squeeze of lemon. Enjoy!
