Oven, Sheet Tray, Knife, Electric hand mixer
Step 1
Preheat the oven to 350°F. Line a sheet tray with parchment paper. Add walnuts & pecans to the tray. Toast the nuts in the oven for 5-7 min.
Step 2
Meanwhile, in a large bowl, add 3 tbsp of powdered sugar (for 12 cookies), softened butter & vanilla extract. Use an electric hand mixer to beat it all together, until creamy.
Step 3
Remove the nuts from the oven once toasted. Transfer to a cutting board & finely chop. Save the parchment paper on the tray for baking the cookies! Add the nuts to a medium bowl with a pinch of salt & the flour. Mix to combine.
Step 4
Add half of the flour & nuts mixture to the creamed butter. Mix it all together, then add the rest. Mix until everything is combined. You may need to use your hands to bring it all together.
Step 5
Use your hands or a cookie scooper to form 1 inch balls. Place each cookie on the sheet tray lined with parchment paper, leaving a 1/2 inch space between each. Bake the cookies in the oven at 350°F for about 8-12 min, or until the bottoms of the cookies are golden.
Step 6
While the cookies bake, fill a mixing bowl with the remaining powdered sugar.
Step 7
Remove the cookies from the oven & cool for several minutes before tossing in powdered sugar. Serve & enjoy!
