Air fryer
Step 1
Add the tortellini, frozen spinach, curry powder, coconut milk & a splash of water (about 2 tbsp per serving) to the air fryer basket. Grate in the garlic. Season with salt, pepper & a pinch of red pepper flakes (optional). Mix to combine. (Don't worry if the frozen spinach is hard - it will soften as it cooks!)
Step 2
Cook in the air fryer for 15 min at 400°F, stirring halfway through cooking.
Step 3
When the tortellini & spinach are cooked, remove the air fryer basket. Mix again. Season to taste with salt & pepper. If desired, drizzle with coconut milk to finish. Serve & enjoy!
