Ingredients

Utensils

Stovetop, Frying pan, Pot (small)

White mushrooms (whole)

Step 1

Wash & slice the mushrooms into quarters.

Herbes de Provence

Step 2

Heat a drizzle of olive oil in a pan, over medium heat. Add the mushrooms. Season with salt, pepper & seasonings of your choice (we suggest Italian seasoning). Stir & cook for 6-8 min.

Egg

Step 3

Meanwhile, in a pot of boiling water, cook the eggs for 6 min. As the eggs cook, prep a bowl of ice water. After 6 min, transfer the eggs to the ice water to stop the cooking. Once cool to touch, peel off the shells & set aside.

Goat cheese (log)

Step 4

In the meantime, slice the goat's cheese log into rounds.

Spring mix lettuce
Croutons

Step 5

Serve the lettuce in a bowl with the mushrooms, goat's cheese rounds, soft-boiled eggs cut in half & croutons. Re-season to taste & enjoy !
