There are endless ways to enjoy cauliflower these days. Try two of our favorites in one dish!
Oven, Stovetop, Baking dish, Colander, Immersion blender, Pot (large), Pot (small)
Step 1
Preheat the oven to 400°F. Cut the cauliflower in half. Remove the tough stem & outer leaves.
Step 2
Slice half of the cauliflower into 1-inch thick steaks. Cut or break the other half into florets.
Step 3
Add the cauliflower florets & steaks to a large pot of salted boiling water. Cook the steaks for 5 min & the florets for 10 min.
Step 4
Meanwhile in a small bowl, add paprika, maple syrup, lemon juice & garlic (grated, minced, or crushed).
Step 5
Season with salt & pepper. Add a drizzle of olive oil. Whisk to combine.
Step 6
After 5 min, remove the cauliflower steaks from the pot. Leave the florets to cook for another 5 min.
Step 7
Add a drizzle of olive oil to a baking dish or sheet. Lay the cauliflower steaks in the dish. Generously coat them with the marinade. Bake for 15 min at 400°F.
Step 8
Wash & trim the green beans. Add them to another pot of salted boiling water. Cook for 3-5 min, or until crisp-tender.
Step 9
Drain the cauliflower florets. Mash with a fork or purée with an immersion blender. Add oil, salt & pepper to taste.
Step 10
Zest the lemon over the cauliflower mash & stir.
Step 11
Drain the green beans.
Step 12
Remove the cauliflower from the oven. Serve the cauliflower steaks over the cauliflower purée & alongside the green beans. Season with salt & pepper. Enjoy!
