Pot (small), Stovetop, Knife
Step 1
Wash & halve the cherry tomatoes.
Step 2
Roughly chop Kalamata olives.
Step 3
Roughly chop sun-dried tomatoes.
Step 4
In a pot of salted boiling water, cook the orzo according to package instructions. Strain & rinse under cool water to stop the cooking. Transfer to a large bowl.
Step 5
Add in pesto, sun-dried tomatoes, Kalamata olives, cherry tomatoes & mini mozzarella balls. Mix it all together. Serve with a fresh squeeze of lemon. Enjoy!
