Ingredients

Stovetop, Frying pan, Electric hand mixer

Egg

Step 1

In a mixing bowl, separate the egg whites from the egg yolks.

Flour (all-purpose)
Baking powder

Step 2

In a second mixing bowl, add: the flour, 1 tablespoon of sugar if you wish, baking powder & a pinch of salt. Mix to combine.

Milk (whole)
Butter

Step 3

Add the milk, egg yolks & melted butter. Mix until you have a smooth batter. Set aside.

Step 4

Whisk the egg whites until stiff peaks form.

Step 5

Gradually, gently fold the egg whites into the pancake batter using a spatula.

Step 6

Melt a dab of butter in a pan, over medium heat. Pour a small ladle of batter into the pan—you can cook several pancakes at once. Cook for 2-3 min.

Step 7

Flip the pancakes & cook for 2-3 min more, until they are golden brown & cooked through. Repeat the process until all the batter is used up.

Gold Kiwi

Step 8

Peel & cube the kiwi.

Coconut (chips)
Maple syrup

Step 9

Serve the pancakes on a plate. Top with the kiwi, coconut chips, if you have any & a good drizzle of maple syrup. Enjoy!
