Step 1
Preheat oven to 400°F. Chop the butter into pieces. Then bring the butter to room temperature.
Step 2
In a mixing bowl, combine the flour, butter, sugar & a pinch of salt. Mix it together with your fingers until it forms a sandy texture. Then continue until it comes together into large clumps.
Step 3
Add the dough to a greased pie or tart pan. Using a drinking glass, flatten the dough into the pan to make the crust.
Step 4
Trim the edges with a knife, if needed. Pierce the crust several times with a fork.
Step 5
Bake the crust for 15 min at 400°F, or until golden brown. Set it aside to cool.
Step 6
Break the chocolate into pieces & add them to a heat-proof mixing bowl. (Add a spoonful of sugar if you like!)
Step 7
Add the cream to a small pot over medium heat. Once the cream starts to boil, remove it from the heat. Pour the cream over the chocolate. Stir with a rubber spatula as the chocolate chunks start to melt into the cream.
Step 8
As the chocolate melts, start whisking the chocolate-cream mixture. Continue until it forms a smooth ganache. Pour the ganache into the cooled crust, spreading it out evenly with the spatula.
Step 9
Sprinkle sea salt over the tart. Refrigerate for at least 2 hours before serving. Enjoy!
