Step 1
Preheat the oven to 400°F. Wash & wrap the potatoes in aluminum foil. Place them on a baking sheet & bake for 50 min - 1 hour or until fork tender.

Step 2
Meanwhile, peel & finely chop the shallots.

Step 3
Wash & mince the chives, if you have any.


Step 4
Prepare the tuna rillettes. In a bowl, add : the drained tuna, sour cream, shallots & minced chives, if you have any. Season with salt & pepper. Mix to combine.
Step 5
Once the potatoes are cooked through, remove them from the oven.

Step 6
Slice the potatoes 3/4 of the way down the center & hollow them out slightly. Garnish the potatoes with the tuna rillettes & grated mozzarella cheese. Bake for another 10-15 min at 400°F.

Step 7
Once the cheese has melted & the potatoes are cooked, remove them from the oven. Serve the Cheesy Tuna Loaded Potatoes with the lettuce dressed to your liking. Top with minced chives, if you have any left. Re-season to taste & enjoy!
