Chicken breast

Step 1

Preheat the oven to 400°F. Butterfly the chicken breast by slicing through the center, lengthwise, stopping just before the knife reaches the end! Lay a piece of parchment paper or plastic wrap over top. Use a meat mallet or rolling pin to pound the chicken to an even 1/2-inch thickness.

Flour (all-purpose)

Step 2

In a deep dish, add the flour with a pinch of salt & pepper. Dredge the chicken in the flour, coating both sides. Shake off the excess flour.

Egg

Step 3

In a second dish, whisk the egg. Coat the chicken in the egg, allowing the excess egg to drip off.

Bread crumbs (plain)

Step 4

In a third dish, add the breadcrumbs. Coat the chicken in the breadcrumbs.

Step 5

Grease a sheet tray or line with parchment paper. Drizzle the cutlets with olive oil or spritz with cooking spray. Bake in the oven for 20 min at 400°F, or until golden & fully cooked (internal temp reaches 165°F).

Romaine lettuce

Step 6

Meanwhile, wash & roughly chop the lettuce. Add the lettuce to a bowl.

Caesar dressing
Parmesan (shaved)

Step 7

Add the Caesar dressing & cheese. Toss to combine.

Step 8

Once the chicken is golden & crispy, remove it from the oven.

Step 9

On a plate, serve the breaded chicken with the Caesar salad. Add a few shavings of parmesan & freshly ground pepper. Enjoy!
