Step 1

Clean the potato & use a fork to prick several holes around the skin. Place the potatoes in the air fryer basket with the rack. Air fry for 40-50 min at 400°F, turning them halfway through.

Shallot

Step 2

Meanwhile, peel & finely chop the shallots.

Chives (fresh)

Step 3

Wash & mince the chives, if you have any.

Tuna (canned)
Sour cream

Step 4

Prepare the tuna rillettes. In a bowl, add : the drained tuna, sour cream, shallots & minced chives, if you have any. Season with salt & pepper. Mix to combine.

Step 5

Once the potatoes are cooked through, remove them from the air fryer. Slice them 3/4 of the way down the center & hollow them out slightly.

Mozzarella (shredded)

Step 6

Garnish the potatoes with the tuna rillettes & grated mozzarella cheese. Air fry for another 10-15 min at 400°F.

Spring mix lettuce

Step 7

Once the cheese has melted & the potatoes are cooked, remove them from the air fryer. Serve the Cheesy Tuna Loaded Potatoes with the lettuce dressed to your liking. Top with minced chives, if you have any left. Re-season to taste & enjoy!
