This delicious dish takes just a few minutes to make and is a perfect meal for a busy evening. If you’ve just gotten off work and don’t feel like cooking an elaborate meal, you can whip up chick’n and veggies at lightning speed and enjoy the comforting flavors.

This unconventional fall recipe blends unexpected ingredients to make a delicious mix reminiscent of Thai and Indian food. The combination of chickpeas, cauliflower, coconut milk, and turmeric makes this meal equal parts curry and soup, and it tastes fantastic served over a bed of rice.
4. Lentil and Sweet Potato Soup

One pro tip for this recipe – use fresh garlic. We always recommend cooking with fresh herbs to maximize the amount of flavor you get in your meals, so skip the powdered garlic and get a clove from the store instead!
Another tip – use frozen peas. Fresh peas can be hard to find, and frozen peas are an affordable and equally tasty alternative. You will purée the veggies, so you won’t have to worry about dealing with any irregular texture or other issues when using frozen peas.
6. Vegetable Tian
If you’ve never tried tian, you’re in for a treat. Tian is essentially a stew without liquid – the ingredients are cooked to evaporate their moisture, then served in delicious, flavorful layers. Tian is often made with added ingredients like meat or cheese, but you don’t need these add-ins to make the dish taste delightful!
Our vegetable tian is made with zucchini, tomato, and eggplant, three colorful and nutritious vegetables that taste fantastic when baked in the oven. We harnessed the flavors of fresh thyme to make the baked veggies a bit more savory, as well as a bit of fresh garlic.
7. Zucchini and Pea Curry
Zucchini and peas are two of our favorite fall vegetables, and they taste so good together. In this recipe, we combined them with traditional Thai ingredients like rice noodles, coconut milk, and curry powder to make a comforting dinner you’ll love.
8. Couscous With Olives and Pine Nuts
Couscous is an underrated food. It has an uncanny ability to absorb the flavors from other ingredients, which makes it an ideal pairing for fresh herbs, lemon juice, and green olives. We’ve combined all of those ingredients, along with crunchy pine nuts, to make the best kind of recipe – one you can make in just a few minutes with ingredients you already have.
We’re big fans of the way fresh cilantro tastes on top of cooked couscous. If you want to make those flavors blend together even better, try topping your couscous off with lemon zest.
9. Cauliflower Steak and String Beans
Some of the best steaks don’t come from a cow – and this is one of them!
This cauliflower steak has an incredibly unique flavor profile thanks to the addition of a marinade made from paprika, maple syrup, lemon juice, and garlic. These ingredients are absorbed into the cauliflower, which soaks them up to make every bite taste like heaven.
10. Sauteed Rice With Turmeric and Cashews
This is another comforting fall recipe to keep you warm when the weather starts getting cold. We love cooking with turmeric, cumin, and curry powder in the fall and winter, and this vegan rice dish tastes lovely thanks to the addition of those delicious spices.
