Step 1

Cut the tomatoes in half.

Tortellini (Spinach & cheese)

Step 2

Meanwhile, in a pot of boiling salted water, cook the tortellini according to the package directions. Drain & let the tortellini cool completely.

Spring mix lettuce
Mozzarella (fresh)
Pine nuts

Step 3

In a dish, add the spring mix, tortellini, cherry tomatoes, mozzarella torn into pieces & pine nuts (optional). Season with a drizzle of olive oil, salt & pepper. Add a drizzle of your favorite vinegar if desired. Enjoy!
