Step 1
In 2 small bowls, separate the egg yolks from the whites.
Step 2
Add a pinch of salt to the egg whites. Beat or whisk until they form stiff peaks.
Step 3
To the egg yolks, add the sugar & mix until the mixture thickens & becomes lighter in color.
Step 4
Add the mascarpone, amaretto, vanilla extract & a pinch of vanilla sugar, if you have any. Beat until smooth.
Step 5
In batches, gently fold the whipped egg whites into the mascarpone mixture.
Step 6
Prepare the coffee (about 1.5 cups for 8 servings) & pour it into a shallow container to cool. Working one ladyfinger at a time, quickly dip the cookie into the coffee, then place it in a large baking dish. Repeat until the bottom of the baking dish is covered.
Step 7
Add half the mascarpone mixture over the ladyfingers. Spread evenly using a spatula. Add a second layer of ladyfingers, then another layer of mousse. Cover the tiramisu & chill in the refrigerator for at least 3 hours up to overnight.
Step 8
Remove the tiramisu just before serving & dust with cocoa powder. Enjoy!
